Blueberry, Lemon Pancakes serves 1
1 mashed banana
1/2 cup oat flour
1/4 cup all purpose flour
1/3 cup almond milk
juice 1 lemon
1tsp baking powder
zest 3/4 lemon
1 handful blueberries
- Mix up all the ingredients in a bowl and leave to rest for 15 minutes.
- Heat up a non-stick pan with coconut oil/margarine on a low heat.
- Add a fist sized amount of batter to the pan and wait for the edges to brown. Then flip over and brown the other side.
- Repeat till the batter is gone then fill your face with them.
