Bake of the week! GF & Vegan Blueberry Lemon Pancakes.

We jazzed up our pancake recipe this week (any excuse for pancakes) to include a different flour, extra lemon and some delicious blueberries. Even if we say so ourselves, these pancakes are great for poorly people, just shovel them down your throat and your belly will thank you for it.

Just imagine that picture with blueberries, our camera lead broke broke so we can't use our photos.

Blueberry, Lemon Pancakes serves 1


1 mashed banana
1/2 cup oat flour
1/4 cup all purpose flour
1/3 cup almond milk
juice 1 lemon
1tsp baking powder
zest 3/4 lemon
1 handful blueberries
  • Mix up all the ingredients in a bowl and leave to rest for 15 minutes.
  • Heat up a non-stick pan with coconut oil/margarine on a low heat.
  • Add a fist sized amount of batter to the pan and wait for the edges to brown. Then flip over and brown the other side.
  • Repeat till the batter is gone then fill your face with them.
