Bake of the week! GF & Vegan Carrot Cake Pancakes.


Laura loves pancakes, so pancakes is what she gets. She feels like she's never had enough so we've been making that right lately. And anyway, who doesn't love pancakes? We've been experimenting a little with different recipes and our latest one turned out pretty damn good, if i do say so myself. You must try these Carrot Cake Pancakes by the lovely Cara, that woman's a vegan/gluten free miracle worker.

These pancakes were really easy to get going, and they stay together pretty well in the pan too. Laura found these quite heavy going but she eats like a sparrow anyway, if you're a proper human being you'll be able to chew these down (if you like vegetables, eww) like no-one's business! We didn't make the glaze that Cara used but the second time i made them i drizzled a little basic orange icing over the top for that extra sweetness that Laura craves so much. And yes, she had them twice in one day. Awesome.

Thankful Thursday | 12

This Thursday I am thankful for:
12 - one bornn every minute for being easy watching. It also manages to scare me out of ever wanting to give birth whilst making me want to be a Mum even more. Crazy stuff.

2 Weeks Notice.

It's that time again, gosh! Time really does fly. I've had some really great feedback for these posts, and to be honest I really enjoy sharing the things I've stumbled across. So, grab your cuppa and have a good read.

  • This live version of Run by Chasing Grace sounds pretty good to me. I'd really reccomend listening to a few of their songs, they're the perfect summer evening chill out song.
  • From Roses is one of my favourite beauty blogs, it has a beautiful layout and Rebecca's photos are always flawless. But, my favourite of her recent posts has to be her post on Nail Care & Prep which I will be going back to for future pamper day reference.
  • CLICK THIS LINK! I love the Little Winter blog and I now I'm even more in love. This post is a must read if you're a normal human (aka obsessed with cute things) for a peak into a day in the life of little Runkle.
  • This blog post had me close to tears. All I can say is if you have a heart read it. I just like to think we all have those people that just know and will always be there.
  • I love Sarah Churchill, seriously type her name into YouTube and be prepared to lose hours of your life (and if you're a spoonie she will definitely relax you). The video above is her unboxing a little present from the book people which will leave you wanting to buy every pretty hardback she flaunts.
  • Lauren Conrad's blog is fast becoming one of my favourites to have a little look around, so it's only natural I feature her post on the top 10 beauty foods. I'm sure this will be interesting to you and its got me thinking about how many I can fit into one meal.

Bake of the week! GF & Vegan Lemon Drizzle Cake.


We have not only a successful bake, but an amazing bake, full of lemony goodness. About time, eh? We started off the week thinking i would be making some cinnamon struesel muffins but then Laura saw Anna's lemon drizzle recipe and started craving, badly. We also thought that seeing as Laura is so poorly a gooey lemon drizzle cake would be easy to munch on and ingnite her interest in food (which it did). So we found this gluten-free and vegan gem and whipped up a storm.

It's a pretty simple recipe, mix all the ingredients in a bowl and shove it in the oven (the best kind of recipe). It comes out crumbly and perfectly sweet with a good dose of lemon. What more could you want?

Thankful Thursday | 11

I'm sorry we haven't been posting much lately, the blog is taking a back seat while we build me back up. My step Nan died a couple of weeks ago and her funeral was last Friday so I'm sure all of you Spoonies can sympathise with how tiring this has been for me. I just want to ask you to bear with us, we're grateful for every single one of you that follows our little blogging world and next month is going to be a good 'un!

This Thursday I am thankful for:
11 - my fabulous Jane Iredale pure pressed mineral foundation. Gosh, it did the job last Friday! This beauty lasted through a hell of a lot of crying and me cooking in sweat. It's not super cheap but it works so well, for spoonies and non-spoonies alike. Thank you very much Jane Iredale.

Bake of the week! GF & Vegan Bread No.1

Laura's been craving bread for a long time now, ever since becoming gluten-free. My attempts before have failed miserably so she's had to hold on for me to master the art (not mastered it yet, but i'm on my way). This week i attempted Cara from Fork and Beans' recipe and it was the first edible bake! Doesn't look too shabby either.

We had to deviate from the recipe because we didn't have any tapioca starch, so we substituted it for some potato starch. But we're not sure if it worked the same so we recommend using tapioca. The texture was perfect, our problem was with a chemical after-taste, bleurgh (Laura will be asking Cara about this). But all in all, we suggest giving it a try!

Thankful Thursday | 10

I love Thankful Thursdays! I'd really reccomend that all of you give it a go, especially when you're having a bad day.

This Thursday I am thankful for:
10 - This Morning. I can guarantee you that every single morning (except Fridays; Aemon and Ruth = bleugh) you will catch me watching at least 15 minutes of this wonderful show. I know it takes a lot of spoonie energy but I find it very relaxing. And, of course, there's Phillip Schofield.

2 Weeks Notice.

No videos this time guys. I'm storing energy so trying to insert videos into a post is a little too adventurous. Although, I do have 6 links that I'm sure you'll love.

  • Cara from Fork and Beans is one of my favourite bloggers. Everything's vegan gluten free and, of course, baked, what more could a girl want?! We're going to be making her Gluten-Free Vegan Bread for this weeks Bake of the week (though her bagels will be coming up soon too). Yum.
  • I'm in to jewellery making, I love it! When I was better I'd sit for hours and make jewellery for anyone I could, I even got Michael into it. So when I saw this bangle post on e-elise etc. I knew I would just have to give it a go.
  • I love the website Hello Giggles. I mean, come on, who doesn't love Zooey Deschanel? Head over there asap, you won't resurface for hours. But, today the post I'm talking about is about making a cheap lipstick work like mac and i will be hanging onto this for a long long time.
  • I'm very interested in this post on golden almond milk. Nope, that's all I'm saying, you'll have to go see for yourselves.
  • I saw these Carribean Empanadas with Mango Salsa when they were first posted then forgot about them. Until last week when my lovely friend sent the recipe to me after trying them herself. Her verdict: delicious.
  • I recently stumbled upon the blog Keiko Lynn and didn't move from there for a good while, all because of Keiko's hair. My hair's a bit of a mess right now because my lovely hair dresser upped and left for Oz so we're on the search for a new mobile hairdresser (no easy feat, I tell you). But, for now I'm going to be trying this lovely faux updo tutorial, trying being the operative word.

Bake of the week! GF & Vegan Single Crumble.

Sorry guys, our recipes have been getting a little boring. But no more..... After today that is. The reason behind these bleugh recipes is that we were running out of flours and gluten free flours are not so easy to come by. Alas, we received a shipment of the finest flours known to man yesterday so you need to prepare yourselves for the awesome of next week's bake. Although, for now, you'll just have to make do with our Nectarine and Apple Crumble!

GF/Vegan Nectarine and Apple Crumble serves 1

Ingredients:

Topping-
50g all purpose gf flour
35g oats
20g butter
20g sugar

Filling-
1 nectarine
1 apple
1 tbsp sugar
1 tbsp water

  • Preheat the oven to gas mark 6.
  • Chop up the fruit and lay it in a small oven proof dish. Then sprinkle the tablespoons of sugar and water over the fruit.
  • For the topping, mix the flour and butter together by rubbing them between your fingers until they resemble a fine bread crumb.
  • Stir the sugar and oats through the mixture, careful to maintain the texture.
  • Spread the topping over the fruit, then wack in the oven for 15-20 mins until golden on top.
  • Enjoy.

Thankful Thursday | 9

To be completely honest, I'm really not in a 'thankful' mood due to a family loss. But, this is a time that is perfect for a Thankful Thursday and I'm determined to be upbeat for something.

This week I am thankful for:
9 - My Pamp (Grandad) added a head rest to my wheelchair because I can't hold my head up and Boy! Do I love it?! It makes going out just that little bit easier which all you Spoonies will know makes all the difference.

Bake of the week! GF & Vegan Blueberry Lemon Pancakes.

We jazzed up our pancake recipe this week (any excuse for pancakes) to include a different flour, extra lemon and some delicious blueberries. Even if we say so ourselves, these pancakes are great for poorly people, just shovel them down your throat and your belly will thank you for it.

Just imagine that picture with blueberries, our camera lead broke broke so we can't use our photos.

Blueberry, Lemon Pancakes serves 1

Ingredients:

1 mashed banana
1/2 cup oat flour
1/4 cup all purpose flour
1/3 cup almond milk
juice 1 lemon
1tsp baking powder
zest 3/4 lemon
1 handful blueberries
  • Mix up all the ingredients in a bowl and leave to rest for 15 minutes.
  • Heat up a non-stick pan with coconut oil/margarine on a low heat.
  • Add a fist sized amount of batter to the pan and wait for the edges to brown. Then flip over and brown the other side.
  • Repeat till the batter is gone then fill your face with them.
